Tasty Chicken Kebabs

Ingredients

  • 4 skinless, boneless thighs
  • 1 red capsicum
  • 1 red onion
  • Dash of olive oil
  • Heavenly Hell Game Changer

Instructions

  1. Cut your thighs into roughly 4 strips each, trim off fat if you want
  2. Season well with Heavenly Hell Game Changer, then put into a plastic snap lock bag, add a dash of olive oil and mix well
  3. Seal the snap lock bag and refrigerate for at least 1hr or up to overnight
  4. Dice capsicum and onion into squares, roughly 20mm x 20mm
  5. Shortly before cooking, remove chicken from the bag and thread all your ingredients on to some skewers
  6. Grill on low to medium direct heat until 165f internal is reached

Tips

- remove from direct heat if need be, set up your cooker to have a direct and indirect cooking zone as not to burn the outside before being cooked through well.
- cut thick strips of thigh and fold it over when threading on to the skewer, this gives a nice, meaty bite and cooks well over a longer cooking time
- trim your skewers if needed to fit your BBQ
