Ingredients
- For the Pulled Lamb:
1.5 kg (3.3 lbs) lamb shoulder
2 tablespoons Smoky Pastures Game On BBQ rub
1 cup chicken or vegetable stock
1 large onion, sliced
4 cloves garlic, minced
2 tablespoons olive oil - For the BBQ Sauce:
Hanbanero Agogo Hot Sauce - As much as desired - For the Pizza:
4 pizza bases (store-bought or homemade)
2 cups shredded mozzarella cheese
1 cup crumbled feta cheese
1 red onion, thinly sliced
1 bell pepper, thinly sliced
1 cup cherry tomatoes, halved
Fresh arugula for garnish
Olive oil for brushing
Instructions
- Pulled Lamb Preparation
- Season the Lamb:
Rub the lamb shoulder thoroughly with Smoky Pastures Game On BBQ rub.
Let it marinate for at least 1 hour, or overnight for a stronger flavor.
Cook the Lamb:
Preheat your oven to 150°C (300°F).
In a large ovenproof pot or Dutch oven, heat the olive oil over medium-high heat.
Add the sliced onions and minced garlic, sautéing until they become fragrant and start to caramelize.
Place the seasoned lamb shoulder on top of the onions and garlic.
Pour in the stock, ensuring the lamb is partially submerged.
Cover the pot and transfer it to the preheated oven.
Cook for 3-4 hours, or until the lamb is tender and easily pulls apart with a fork.
Shred the Lamb:
Remove the lamb from the oven and let it rest for 15 minutes.
Shred the lamb using two forks, discarding any excess fat.
Mix the shredded lamb with Habanero Agogo hot sauce, careful to add only as much as you can handle. - Pizza Assembly:
- Preheat Oven:
Preheat your oven to 220°C (430°F). If using a pizza stone, place it in the oven to heat up.
Prepare the Bases:
Brush the pizza bases lightly with olive oil.
Assemble the Pizzas:
Spread a generous amount of the lamb mixture over each pizza base.
Sprinkle shredded mozzarella cheese evenly over the top.
Distribute the crumbled feta cheese, sliced red onion, bell pepper, and cherry tomatoes over the pizzas.
Bake the Pizzas:
Transfer the pizzas to the oven (using the pizza stone if available) and bake for 10-15 minutes, or until the crust is crispy and the cheese is melted and golden.
Garnish and Serve:
Remove the pizzas from the oven and top with fresh arugula.
Slice and serve immediately
