Sweet, savory, and full of umami, these Honey Soy BBQ Chicken Thighs are marinated in Low n Slow Basics Honey Soy BBQ Rub, then grilled or roasted to perfection. With a sticky glaze, charred edges, and bold flavor, they're perfect for a summer BBQ or easy weeknight dinner.
Ingredients
- 1.5 kg chicken thighs (bone-in, skin-on or boneless – your preference)
- 2 tbsp Low n Slow Basics Honey Soy BBQ Rub
- 2 tbsp olive oil
- 2 tbsp soy sauce (optional – boosts umami)
- 1 tbsp honey (for added glaze)
- 1 tsp sesame oil (optional – for extra depth)
- Spring onions and sesame seeds (for garnish)
Instructions
- Marinate the Chicken:
In a large bowl or zip-top bag, mix the olive oil, soy sauce, honey, and sesame oil.
Add the Honey Soy BBQ Rub and mix until combined.
Toss chicken thighs in the marinade to coat well.
Cover and refrigerate for at least 2 hours, ideally overnight.
- Grill or Roast:
Grill Method:
Preheat BBQ to medium-high heat (~180–200°C / 350–400°F).
Grill chicken skin-side down for 4–5 mins until nicely charred.
Flip and cook another 5–8 mins, or until internal temp reaches 74°C (165°F).
Oven Method:
Preheat oven to 200°C (390°F).
Place chicken on a baking tray lined with baking paper or foil.
Bake for 35–40 mins, basting once with juices halfway through.
- Finish & Serve:
Rest the chicken for 5 mins.
Garnish with chopped spring onions and sesame seeds.
Serve with steamed rice, grilled veggies, or an Asian slaw.
Tips
Use leftover marinade (boiled for safety) as a glaze.
This rub also works well on pork ribs or tofu.
Add a splash of lime for zing before serving.
