Hardcore Carnivore Tex Mex Fajitas bring bold, smoky flavor to the table with perfectly seared strips of marinated steak, charred peppers and onions, and a kick of Tex-Mex spice. Wrapped in warm tortillas and finished with your favorite toppings, these fajitas are a meaty, mouthwatering feast for serious carnivores
Ingredients
- 500g chicken breast or thigh fillets, thinly sliced
- 2 tbsp Hardcore Carnivore Tex Mex BBQ Seasoning
- 2 tbsp oil
- 3 capsicums (one of each colour red, green, yellow) thinly sliced
- 1 large onion, thinly sliced
- 8 flour tortillas
Instructions
- Marinate the Chicken: In a large bowl, combine the sliced chicken with 1 tablespoon of oil and Hardcore Carnivore Tex Mex seasoning. Mix well to ensure the chicken is evenly coated, cover and put in the fridge for 30 minutes.
- Toss the sliced capsicums and onion together with the oil.
- Heat a bbq plate or a pan over medium-high heat. Add the chicken and cook for 5-7 minutes, stirring occasionally, until the chicken is cooked and slightly charred. Remove from the bbq plate or pan and set aside.
- On the same bbq plate or in the same pan, stir fry the vegetables for 4-5 minutes until cooked.
- Return the cooked chicken to the bbq plate or pan and toss everything together and cook for an extra couple of minutes, adding some more seasoning if you like.
- While the chicken and peppers are cooking, warm the tortillas in a dry skillet or on the bbq plate (after giving it a quick wipe) for about 30 seconds on each side.
- Spoon the sizzling fajita mixture straight from the pan into the warm tortillas, adding any toppings of your choice. Sour cream, guacamole, cheese, coriander and a squeeze of lime juice are all good choices!
