Hardcore Carnivore Tex Mex Fajitas bring bold, smoky flavor to the table with perfectly seared strips of marinated steak, charred peppers and onions, and a kick of Tex-Mex spice. Wrapped in warm tortillas and finished with your favorite toppings, these fajitas are a meaty, mouthwatering feast for serious carnivores

Ingredients

  • 500g chicken breast or thigh fillets, thinly sliced
  • 2 tbsp Hardcore Carnivore Tex Mex BBQ Seasoning
  • 2 tbsp oil
  • 3 capsicums (one of each colour red, green, yellow) thinly sliced
  • 1 large onion, thinly sliced
  • 8 flour tortillas

Instructions

  1. Marinate the Chicken: In a large bowl, combine the sliced chicken with 1 tablespoon of oil and Hardcore Carnivore Tex Mex seasoning. Mix well to ensure the chicken is evenly coated, cover and put in the fridge for 30 minutes.
  2. Toss the sliced capsicums and onion together with the oil.
  3. Heat a bbq plate or a pan over medium-high heat. Add the chicken and cook for 5-7 minutes, stirring occasionally, until the chicken is cooked and slightly charred. Remove from the bbq plate or pan and set aside.
  4. On the same bbq plate or in the same pan, stir fry the vegetables for 4-5 minutes until cooked.
  5. Return the cooked chicken to the bbq plate or pan and toss everything together and cook for an extra couple of minutes, adding some more seasoning if you like.
  6. While the chicken and peppers are cooking, warm the tortillas in a dry skillet or on the bbq plate (after giving it a quick wipe) for about 30 seconds on each side.
  7. Spoon the sizzling fajita mixture straight from the pan into the warm tortillas, adding any toppings of your choice. Sour cream, guacamole, cheese, coriander and a squeeze of lime juice are all good choices!
